Fermentation star heading to Pakenham

Fermenting superstar Sandor Katz is coming to Pakenham to share his food-preserving knowledge with local residents.

In a special event hosted by the Cardinia Food Movement, Sandor Katz, along with Blayne and Chayse Bertoncello of OM.Y farm, bar and restaurant, will share their skills with an eager crowd.

The event is part of the Sandor Katz 2020 Australian tour ‘Ferment Yourself Wild’ by The Fermentary, and follows sold out sessions in Byron Bay, Surrey Hills, Hawkesbury, Daylesford, the Mornington Peninsula, Adelaide, Margaret River, Hobart and Melbourne.

Mr Katz will share a Wild Fermenting food demonstration and the Bertoncello brothers will be in conversation discussing topics from farming your own ingredients, flavours of seasonal produce, fermenting ingredients, creating ferments, menu development and enjoying meals with fermented foods.

Lisa Brassington, collective impact facilitator – food circles at Cardinia Shire Council, said the event was an exciting one for the growing Cardinia Food Movement and would help cement Cardinia’s reputation as a hub of food achievement, success and passion.

Self-described ‘fermentation revivalist’ Mr Katz is heralded as the unofficial global godfather of the fermentation movement.

Fermenting is catching on around the world as a means of reducing food waste and add new textures and flavours to meals.

The special event will take place on Saturday 29 February from 9am-1.30pm at the Cardinia Cultural Centre.
