PLANS to develop a function centre in a new Main Street restaurant is a pivotal point in Gembrook’s future according to Cardinia Shire councillor Tania Baxter.
The council approved plans for The Independent, previously a hardware store, lolly shop and community market place, to cater for up to 130 people and to increase operating hours until 11pm.
The council expects the building to be a hub for tourism events, weddings and other functions.
Ranges Ward’s Cr Baxter said the plans were a boon for the area.
“It’s a pivotal point in its (Gembrook’s) future,” she said.
Central Ward’s Cr Collin Ross said the building would enliven the area.
“It will activate some life into Gembrook,” he said.
“And it will encourage people to shop local.
The development does not require any further car spaces.
The plan received one objection which had concerns including potential noise issues and hours of operation.
Owned by the Gordon family and acclaimed Argentinian chef Mauro Callegari, the business is set to showcase prime local produce and boost employment in town.
The Independent is expected to open from late August or early September.
